Glass Noodle Salad

ingredients for 4 persons

300g fresh spinach
1/4 yellow pepper
1/4 red pepper
1/2 carrot 
1/2 zucchini
3 egg whites
3 egg yolks
250g glass noodles
(3 slices of fish cake on request)

Step 1: prepare the content

Put the fresh spinach in boiling water and bring to the boil for 8-10 seconds. Then rinse the spinach in cold water and put aside.

Then cut the carrot, bell pepper, zucchini (and fish cake) into thin strips and fry in the pan with oil.
Fry the egg yolks and whites separately as an omelette in a pan and also cut into thin strips and set aside. 

Boil glass noodles in a pot with water for 6-8 minutes.

Then put it out of the pot in the cold water. Cut the cooled glass noodles into bite-sized pieces.

Step 2: merge all content

Fry the chopped glass noodles in a pan for 2-3 minutes and add the soy sauce.

Place the finished glass noodles in a serving bowl and add the vegetables and omelets. Add sugar, soy sauce and sesame oil and mix well.
